How to Spot a Good Bakery

Traditionally baked bread has a robust crust and a moist, evenly airy crumb. It smells of grain and is still enjoyable the next day. Do ask how long the dough was left to rest: a long fermentation gives more flavour and usually makes the bread easier to digest.

  • Freshness: Go early in the day, when the choice is greatest and everything is freshly baked.
  • Ingredients: Flour, water, salt and time are all it takes for good bread. A short ingredients list is a good sign.
  • Regional specialities: Try Bethmännchen, Frankfurter Kranz or, at Christmas, Brenten (spiced Christmas biscuits) if you'd like to get to know the local baking.
